Healthier Egg Salad
- 1 5-ounce can tuna, preferably packed in olive oil, drained
- 1/2 ripe avocado, roughly chopped
- 1/2 cup minced celery
- 1/4 cup minced red onion
- 1 Tbsp olive oil
- 2 teaspoons lemon juice
- 1 teaspoon lemon zest
- 2 Tbsp chopped fresh cilantro or parsley
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
Place all of the ingredients in a medium bowl. Mix with a fork, mashing the avocado and breaking up the chunks of tuna as you go, until the ingredients are well combined. Serve on your favorite wrap, bread, in a lettuce or chard leaf or over lettuce salad.
A simple change to classic egg salad with mayo makes this egg salad healthier for you and but still delicious! You can really make this in any ratio of ingredients that you like. We've shared a sample below but you may want to adjust the mustard or greek yogurt to taste based on how you like it. We love to serve this in large lettuce leaves wrapped up, but it's great on bread, a wrap, tortilla, bed of lettuce or whatever you prefer!
