Kid-Loving Protein Muffins

These blueberry muffins with a hint of lemon are a savorite snack or breakfast around our house!


The kids love their taste, and I love that they can be a complete snack because their better carbs are balanced with protein.


Recently I've been playing with muffin recipes to combine healthy fats, carbs, veggies, and proteins all in one bite to simplify snack and breakfast time. Through watching my kids eat and grow, I've learned that when they eat balanced, macros it helps so much with their moods and body functions which in turn helps my mom mood too!


And the same principle applies to our adult bodies as well. We should aim to have balanced macros to promote good feels and help stabilize blood sugar.


Today's quick and easy packaged snacks are so carb and sugar heavy. When the kids have them, even better items like the clean Skinny Pop rice cakes, I always like to pair a protein, but it's sometimes a struggle to get them to add something else like cheese, nuts, or yogurt.


While I continue to work on a muffin that has veggies too, this one bite mom-win muffin is very welcomed in my household! The kids truly love them, eat them right off the pan, and even ask for more.


The recipe uses wholesome ingredients -- not allergen free like many other Savor Life Wellness foods, but still nutritious for growing little bodies or adults who want a better sweet option.


Shortly after this little lady pictured above was born, a friend shared some sour dough starter with me, and we've enjoyed learning how to use to make bread, muffins, and crackers.


Sourdough starter is the basis of this muffin. It has a wide range of studied benefits including helping one's gut, digestion, blood sugar, and immune system. It is an item that you may not have right on hand, and it can take some time to prepare or learn. Many free tutorials or recipes area available to help start sourdough starter. It is simpler than it sounds once you try, but check out the note below under recipes notes if you need help with this.



Here's the recipe:


Sourdough Blueberry Lemon Muffins by Savor Life Wellness


5 Tablespoons unsalted softened butter

1 large egg

3/4 cup plain Greek yogurt

Lemon zest from one lemon - about ½ tsp

1 cup sour dough starter (at room temperature)

1/2 cup cane sugar

1 cup whole wheat flour

¼ cup powder protein (I like plain THM whey power for my kids)

1 ½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

1 cup fresh or frozen blueberries


Add the first five ingredients to a bowl and stir. Then add the remaining powder ingredients and stir. Fold in the berries last. Spoon into muffin liners and bake for roughly 15-20 minutes in a preheated oven set for 350 degrees. I find the time can vary and usually start sticking a toothpick in the middle near the end of the baking time to test for doneness. If the toothpick comes up out of the middle clean (not all gooey), the muffins are ready.

The muffins freeze well so they can be made ahead and popped out for a quick thaw any time.
