Five Fast & Healthy Breakfasts

Whether you’re running out the door or hustling around home in the morning, I’ve got some fast and healthy breakfasts that will make in your morning better! Plus, they will nourish all the bodies for whatever is ahead with more than a little snack bar because breakfast is important!
Even Jesus said in John 21:12: “Come and have breakfast” :)
So, to help make your morning more savorable, here are some make-ahead options that you can freeze or refrigerate, and kids can grab and go if need be. They are simple, wholesome, protein-filled, and made with real foods only. Most are gluten free with dairy free options too:
Breakfast Delight or Banana Breakfast Bake
My girls love this bake and have named it breakfast delight. It is a pumped up remake of a recipe from Ambitious Kitchen with added protein and probiotic power. This is a sort of banana bread breakfast bake that is simple to make, easy to freeze, and rewarm. Add a scoop of yogurt and you have even more protein to fuel up for the day.

Blueberry Muffins
My kids love this sourdough lemon blueberry protein muffin on my blog. The muffins freeze well and are delicious!

Clean, Refined Sugar-Free Cereal
It took me a while, but I have quit buying cereal from the store. I just can't handle the dyes, fillers, and additives. My kids missed it for a time until I made this refined sugar-free, dye-free, crispy cereal. It stores well and is simple to make. Here is the recipe I’ve made that my kids like. They like it simple, but you can add nutritious boosters like pumpkin seeds and make it even better!
Cinnamon Crispies
5 cups puffed rice
3 T maple syrup
3 T coconut oil
2 T cinnamon
2 tsp ground ginger
1 tsp mineral salt
Line a baking sheet with parchment paper. Preheat oven to 350 degrees F. Combine the maple syrup, oil, and seasonings. Pour over the puffed rice and stir. Spread on baking sheet evenly and bake for about 10 minutes checking on it and stirring occasionally. Let cool and enjoy!
My kids also enjoy on this crunchiness on a bowl of Greek yogurt. I use puffed rice like this one.

Another clean option you could find at special stores is called Lovebird Cereal. We have not tried this because it costs more than I care to pay, but I have heard good reviews.
Banana Muffins
My kids think my twin sister makes the best banana muffins, even when I used her recipe! Hers are better!
Here is the recipe she uses with some substitutions to add protein. I have modified the recipe as follows to add protein:
Substituted the whole grain flour with oat flour. I grind up 2.5 cups of oats and use that as the flour.
Substituted kefir for the milk (optional)
Added half a cup of Greek yogurt (optional)
Added ¼ cup protein powder (I liked these options – THM whey protein or THM hemp protein)

Either of these muffins freeze or keep well refrigerated.
Protein Pancakes
My kids love pancakes, but I sure don’t want to make them as often as they want them, so I have taken to freezing some batches so they can warm them when they want them. Here’s a protein pancake recipe from my website that works well.
